So while I’m doing this incredible detox that I thought I would never survive I have had to give up so many things…one specific thing being pancakes.
I don’t always eat them but almost every Saturday is our big fun family breakfast day where we can relax and eat together. ..not rush off to school or whatever. But since doing this detox I haven’t been able to sit down and enjoy the pancakes with them.
So this weekend I put a stop to all that. I got a nice bulk quantity of rice flour and threw some things together. I was very pleased with the result and so will you!
Ingredients:
1 cup rice flour
2 tsp baking powder
1/2 tsp vanilla
1 egg
Dash of salt (I chose to do without)
2 Tbs sugar (I used coconut sugar)
1 cup milk (I had a coconut/almond milk)
***I also added a tiny tab of honey… just because I happen to have a couple jars of fresh raw honey lying around in my kitchen. 🙂
Mix it all together and drop it on the griddle! I served mine with some flax seed oil butter, fresh raspberries and blue agave nectar…
