If you know me at all, you know I am OBSESSED with Ireland.  My mother one year bought me a book that tests my true Irish’ness… and basically made me feel like an idiot because I really know nothing about Ireland and their culture.  She also took the time to print out our LOOONNNGGGG family line on her side of the family to show somewhere far far far back I truly did have Irish relatives… so even if I am .00001 % Irish, I can still technically say proudly, “I am Irish”

SO, When St. Patricks day comes around I love to get creative and make everything green or make my own versions of some popular Irish recipes.  Guiness Beef Stew with garden veggies, Sweet Potato Shepherd’s Pie and homemade Corned Beef and Hash being just a few examples.  Last year I made these delicious cupcakes as well. ENJOY!

Chocolate Whiskey Cupcakes

{with Baileys Buttercream Frosting}

2 cups all purpose flour

3/4 cup cocoa powder

2 cups brown sugar

2 tsp. baking soda

1 tsp. baking powder

1 tsp. salt

2 eggs

1/2 cup strong brewed coffee

1/2 cup Whiskey

1 cup buttermilk

1/2 cup vegetable oil {or coconut oil}

Mix all ingredients together, spoon into cupcake molds 3/4 full and bake at 350 for 18-22 minutes or until toothpick inserted in the center comes out clean.  They will smell Ahh-mazing!

Baileys Buttercream Frosting

1 cup butter (2 sticks), at room temperature {I use sweet cream butter}
3 cups powdered sugar
4 Tablespoons Bailey’s Irish Cream
2 teaspoons vanilla extract

Just know that these will be the most popular treat around.  They are unique, delicious and just a touch sinful!  Perfect for the upcoming holiday!  If there’s anything better than drinking your alcohol, its eating it!
